A farm away from home

Lorraine Scmid's gluten-free waffles

My profile of Thyme Again Gardens Bed & Breakfast appears in the spring issue of Edible Toronto magazine, now available. Owners Lorraine Schmid and Lori Aselstine are committed biodynamic farmers. Schmid brings to the breakfast table her philosophy that healthy food is the best medicine. Her recipe for these gluten-free waffles appears with the article. Read the article here.

  1. Interesting article. Have you heard of Joel Salatin? He was profiled by Michael Pollan in one of Pollan’s books, among other places, and his philosophy is like Lorraine’s: every farm animal has a job, and taken as a whole, the farm becomes an organism. Fascinating subject. Thanks. 🙂

    1. I’ve read a couple of Pollan’s books but it has been a while. I don’t remember Joel Salatin, but it strikes me that Lorraine’s philosophy fits pretty well with Pollan’s writing. I’ll keep an eye out for Salatin.
